Chandi Hospitality Group is pleased to welcome Scott Beattie and Andrea Mota as the creative force behind the exciting beverage program at the upcoming Bollywood Bar and Clay Oven. Beattie is perhaps best known for his groundbreaking 2008 book “Artisanal Cocktails: Drinks Inspired by the Seasons” and starting some of wine country’s most recognized cocktail programs at Cyrus, Spoonbar, Mateo’s, Goose and Gander, Hog Island Oyster Co.’s Ferry Building, Ramen Gaijin and Meadowood Estate Events, where he currently serves as Beverage Director. Mota is a Healdsburg native who was instrumental in opening and managing Geyserville Gun Club Bar and Lounge. She will be the Bar Manager at Bollywood where you can see her working most nights behind the bar.

The drink menu will feature balanced, delicious cocktails that carefully weave Indian spices and ingredients into both the concoctions themselves and unique garnishes. We are especially excited about using Chef Nevin’s spice blends which are sourced, blended, and ground by his mother in Gujarat. Her Chai blend, Kashmiri chili, and Masala pickling spice have been integral to our drink program and helping to make the cocktails intriguing and uniquely Indian. We will also be utilizing seasonal, Sonoma County produce as well as many of the wonderful spirits now produced nearby. “We are looking forward to becoming a welcome addition to a neighborhood that already boasts so many excellent drinking and eating establishments,” says Beattie.
